Ingredients


- 500g Country Victualler Beef Steak Mince
- 1 tbsp olive oil
- 1 large onion, diced
- 2 garlic cloves, crushed
- 1 red pepper, diced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chilli powder (adjust to taste)
- 1 tbsp tomato purée
- 400g chopped tomatoes
- 400g kidney beans, drained
- 250ml beef stock
- Sea salt and black pepper
Optional Toppings
- Steamed rice
- Sour cream
- Sliced avocado
- Fresh coriander
- Grated cheddar cheese
- Tortilla chips
Method
- Heat the olive oil in a large pan over medium heat.
- Add the onion and cook for 5 minutes until softened.
- Add the garlic and red pepper and cook for another 2 minutes.
- Add the Beef Steak Mince and cook until browned.
- Stir in the paprika, cumin, chilli powder and tomato purée.
- Cook for 1 minute to release the flavours.
- Add the chopped tomatoes, kidney beans and beef stock.
- Bring to a gentle simmer and cook for 20–25 minutes.
- Season with salt and pepper to taste.
- Serve in bowls with rice and your chosen toppings.
